This is very popular, traditional Filipino dish. This my mom’s recipe, which is very simple, but classic. The saltiness from the soy sauce and the sourness from the vinegar gives it a very unique flavor. It is one of my favorite Filipino dishes, and of course my mom’s is the best!

Some people like it very saucy with a lot of broth, but you can cook it longer if you like the sauce thicker. You can also take the meat out of the sauce and sauté it again if you want to brown it a little more.

  • 2 1/2 lbs chicken or pork (chicken wings or thighs, or cubed pork)
  • 3 dried bay leaves
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1 whole garlic bulb, peeled and minced
  • 3 tbsp olive oil
  • 1 tsp whole peppercorn


  1. Brown garlic in a pan
  2. Add chicken or pork and brown
  3. Add bay leaves, soy sauce, vinegar and peppercorns
  4. Simmer until meat is tender and sauce thickens to your desired consistency
